Don’t Own a Barbecue? Don’t Panic!

No doubt you’ve heard all about your friends’ “totally amazing” barbecues by now; with this fantastic heat wave the US is enjoying everybody’s getting in on the action and enjoying a little al fresco dining. But what if you don’t have a barbecue? What if you don’t even have a garden? Well, not to worry; we’ve put together some of our favorite summer meals to knock up at home that’ll have your mates asking for seconds in no time – without a grilled sausage in sight!

Steak and Mixed Peppers Cooking On Hot Skillet

Grab yourself a good skillet and put together this brilliant fajita bowl from 4 Hour Recipes (actually the name of a diet rather than the cooking time, but we can ignore that bit!) that’s as satisfying as it is delicious. All you need to do is add steak and chicken breast to the pan with plenty of vegetables – then stick it in the middle of the table and let everybody load up their plates, along with beans, avocado, cheese and any other treats you can think of.

roast Lemon and Garlic Chicken With Soft Feta Cheese

Impress family and friends with BBC Good Food’s superb summer roast dinner of lemon and garlic chicken with soft feta cheese, richly-flavoured chickpeas and juicy roasted vegetables. Avoid the heavy root vegetables we normally associate with a roast, and instead opt for a side of salad or even a quick lemon couscous.

Delicious Salmon Kebabs Served With Lemon

If you’re determined to recreate the barbecue in your home, these delicious salmon kebabs from Skinny Taste are certain to turn out just as well – if not better – under the grill than they would over an open flame. Just slide cubes onto the skewers, separated with thin slices of lemon, and serve with salad and hot buttered new potatoes for a delicious barbecue-inspired meal that should wow every guest at the dinner table!
