Greek Chicken Traybake

This dish is cooked all in one tray. It’s so easy and packs loads of flavour! This is all cooked inside a Neff Slide&Hide oven. It delivers perfectly cooked chicken with nice crispy skin. 

  • 4 chicken thighs 
  • 1 red onion 
  • 2 peppers 
  • 2 tomatoes 
  • Handful of cherry tomatoes 
  • 1 courgette 
  • 1 jar of artichoke hearts
  • Handful of black olives
  • 200g feta cheese 
  • 1 lemon 
  • Handful of chopped parsley 
  • Garlic bread to serve 
  1. Preheat your oven to 200 degrees. 
  2. Roughly chop your veg and bang it all into a roasting tray. 
  3. Drizzle with some veg oil and season with salt and pepper. 
  4. Season the chicken and place on top of the vegetables. 
  5. Place in the oven for half an hour and then place under the grill to get the skin nice and crispy.
  6. Finish the dish with the some lemon wedges, black olives, feta cheese and chopped parsley.
