Bunny Bottom Donuts

Self-taught baker, food photographer and cookbook author Alix Carey, otherwise known as @mykitchendrawer on Instagram, shows us how to make a super cute and simple bake for Easter – Bunny Bottom Donuts.

These carrot cake baked donuts, dipped in cream cheese icing and decorated with a marshmallow bunny tail and feet, are the perfect way to get the kids cooking in the kitchen over the Easter weekend.

Ingredients

For the carrot cake donuts

  • 140 g plain flour
  • 1/2 tsp baking powder
  • 1/8 teaspoon salt
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg
  • 1 large egg
  • 100 g caster sugar
  • 30 g unsalted butter melted
  • 150 ml milk
  • 2 carrots, finely grated
  • 1/2 teaspoon vanilla extract

For the decoration

  • 50 g softened butter
  • 100 g icing sugar
  • 50 g cream cheese
  • 50 g white chocolate, melted
  • 12 large white marshmallows
  • 50g desiccated coconut
  • Heart Sprinkles 

Instructions

For the donuts

Preheat the oven to 180°C and grease a donut tin with butter

In a large bowl, whisk together the flour, spices, baking powder and salt then set aside.

In a separate bowl, beat together the butter, sugar then add the eggs, vanilla, carrots and milk and whisk together until fully combined.

Make a well in the large dry ingredients bowl and pour in the wet ingredients then gently fold the two together until just combined.

Fill donut holes with batter ¾ way full using a spoon or a piping bag (much easier).

Bake for 8-10 minutes until a toothpick inserted into a donut comes out clean and you can see them peeling away from the tin. Remove from the oven and leave to cool on a wire rack.

For the decoration

Cream together the butter and icing sugar until well combined. 

Add the cream cheese and beat until smooth and creamy. 

One at a time, dip each donut face down into the cream cheese mixture and leave to one side. 

For your bunny tails, take 6 marshmallows and dip them into the melted chocolate then sprinkle with desiccated coconut.  Leave them to set in the fridge for 5 minutes. 

When they are set, place them in the centre of the donut holes. 

Then with the remaining 6 marshmallows, cut them in half and lay two halves underneath the bunny tails for their feet. Finish with some heart sprinkles to resemble their pink paws.
