Toast to autumn

The weather is cooling, the leaves are browning and there’s a whistling wind picking up outside.

Whether you plan to celebrate outdoors with the ghouls and the fireworks, or remain snuggled up on your sofa with a good book, honour the spirit of the season and toast to this dazzling time of year with these autumn-inspired drinks.

Pumpkin spice mocktini

I don’t think we’ll ever tire of pumpkin spice. Last year we celebrated 20 years of the flavour (not sure how it’s been around for that long?!) and new recipes are always being developed to discover how to elevate it and get the best out of its spicy warming goodness. Well, read on, because we might’ve climbed the next step up to pumpkin spice heaven here. This pumpkin spice mocktini is divine. Enjoy…

Ingredients (SERVES 1)

  • Double espresso shot

  • Ice cubes

  • 50ml condensed milk

  • 50ml pumpkin spice syrup

  • 150ml milk

  • Dash of vanilla extract

  • Optional: Biscoff biscuits an caramel syrup for rim

Directions

  • Fill a cocktail mixer just over half-way with ice cubes. Pour double espresso over the top with the condensed milk, pumpkin spice syrup, milk and vanilla extract.
    Optional: take a martini glass and cover the rim with caramel sauce and crushed biscoff biscuits
  • Bash the mixer’s lid on top and give it a good shake
  • Pour through a strainer into a martini glass
  • Garnish with 3 coffee beans

Hocus pocus cocktail

This cocktail might seem terrifying, but it’s also delicious,and once you whip it out at your Halloween party, it’ll beyour mates’ main request the whole way through autumn.Petrifying potions aren’t just for Halloween, you know…Increase the amounts for this recipe and brew up in alarge bowl for a pocus punch!

Ingredients (SERVES 2)

  • 100ml vodka

  • 100ml coconut rum

  • Any purple soda

  • 2x lemon rounds

  • 2 tsp dragon fruit

  • Lemonade

  • Ice cubes

Directions

  • Half-fill two decorative glasses with ice cubes
  • Pour 50ml vodka and 50ml coconut rum into each glass
  • Pour the purple soda over this
  • Sit a lemon round in the drink and place a teaspoon of dragon
    fruit on top
  • Top up with lemonade

Spiced velvet latte

This is for the ones who are after coffee shop drinks but haven’t yet committed to the machine (check out our coffee machine quiz on page 40 to discover the best machine for you!). This warming latte was created for foggy autumn days, so get into your comfies, pop the kettle on, and plan out your dream kitchen with this cosy brew in your hands

Ingredients (serves 1)

  • 1 tsp instant coffee

  • ½ tsp cinnamon

  • ½ tsp nutmeg

  • ½ tsp vanilla extract

  • 200ml milk of your choice

Directions

  • Make up about half a cup of instant coffee in a separate glass
  • Mix with a mini electric whisk until you have a nice frothy layer of coffee sitting on the top
  • Froth up the milk with the vanilla extract, nutmeg and cinnamon. You can do this in a milk frother, or with your electric hand whisk.
  • Add the instant coffee to your favourite mug.
  • Pour the frothed milk over the top.
  • Dust with a sprinkling of cinnamon and get cosy!
