Although many of us like to enjoy ice cream all year round, nothing beats the feeling of cooling down from the summer sun with an indulgent ice cream (or two)!
With thanks to Neff Kitchens, you can satisfy your sweet tooth with this delicious summer dessert that’s super simple to make. This recipe includes fresh and juicy strawberries blended together with creamy coconut milk and a hint of ginger and refreshing lime.

Prep: 20 minutes
Cool Time: 3-5 hours
- 375 g strawberries
- 120 ml coconut milk
- 3 – 4 tbsp icing sugar
- ¼ – ½ tbsp finely grated ginger
- lime juice and zest
Wash and hull the strawberries and drain well. Cover a low plastic container with kitchen paper. Gently place strawberries on the paper and freeze for at least three hours.
Shortly before you serve the ice cream, blend the frozen strawberries in a food processor. Add the coconut milk, sugar, pinch of salt, finely grated ginger, 1 tablespoon lime juice, and blend finely. If the consistency is too soft, re-freeze for 1-2 hours.
Season with a bit of lime zest and serve immediately.
