Today on the blog we are celebrating World Vegetarian Day, which marks the beginning of Vegetarian Awareness Month. To begin this month of wonderful, veggie filled dinners, we’re kicking it off with a few quick and easy meals to get your taste buds going.
Here at Wren we’re always on the lookout for tasty ways to get 5 a day into our diets, so we’re excited to join the veggies this month and see if we can find some healthy dishes that stand up against their meaty alternatives.

Mozzarella, Tomato & Basil Gnocchi
Wonderfully simple, yet hearty and delicious, this gnocchi bake is so warm and comforting the family won’t even notice that it is missing a meaty counterpart! This modest Italian dish, developed by Clare on her blog The Vegetarian Experience, is made from fresh gnocchi; small and soft dumplings, traditionally made from potato. The gnocchi is then baked with a rich tomato and basil sauce, together with the mozzarella, giving a satisfying finish to this Italian classic.
Another quick and easy recipe, Becca’s delightful 15 Minute Mushroom Stroganoff, from her blog Amuse Your Bouche, is a definite winner. Perfect for a busy weekday evening dinner, this stroganoff is packed full of flavour and goodness. It only requires a handful of ingredients, most of which you should have in the pantry, meaning you can throw this lovely meal together in no time at all!
Cajun Spiced Black Bean & Sweet Potato Burger
Enjoy these gorgeous Black Bean and Sweet Potato burgers from Jacqueline’s blog, Tinned Tomatoes, as a tasty guilt-free pleasure. Veggie patties are a great healthy alternative to a regular burger and I find the end results are often even more flavoursome! They require slightly more effort to make than the previous two recipes but they are still extremely cheap and quick.
