Joe & Seph’s – Salted Caramel Popcorn Rocky Road

To celebrate #NationalPopcornDay, we’ve got a poppin’ good recipe from the best-tasting popcorn brand, Joe & Seph’s.

We’re talking salted caramel popcorn smothered in rich dark chocolate, fluffy marshmallows and crunchy digestive biscuits!

This a-maize-ing recipe is top of the pops and the perfect bake to make with your #BakingBuddies!


  • 1 x Pouch of Joe & Seph’s Salted Caramel Popcorn
  • 150g marshmallows
  • 120g digestive biscuits, crushed
  • 100g salted peanuts, crushed
  • 450g dark chocolate, chopped


Grease baking tin

Grease and line a 20cm x 30cm pan with baking paper

Melt chocolate and butter together

Place the chocolate in a heatproof bowl over a saucepan of simmering water and cook, stirring occasionally for 5 minutes until smooth. Set aside to cool for 5 minutes.

Combine rest of ingredients in separate bowl

Combine the Joe & Seph’s Salted Caramel Popcorn, peanuts, marshmallows and biscuits in a bowl.

Add melted chocolate

Once cool, pour over the melted chocolate and combine well.

Place in tin and refrigerate for 2 hours

Spoon the mixture into the pan and place in the fridge for 2 hours or until set.

Cut and serve
