On a dark January morning even the best of us can struggle to get out of bed, never mind finding time for a balanced breakfast, and still making it into the office on time! But, a healthy and vitalising breakfast is the most important way to start your day and if you’re trying to eat and live well it’s imperative you find the time for a decent breakfast.

Overnights oats have become very popular recently, and rightly so. In a busy world it’s increasingly hard to find time for a nutritious breakfast, especially if you have young children to care for in the mornings. The beauty of overnight oats it that you can prepare them the night before, or even a couple of days before if you’re making a batch, and you’ve got a healthy breakfast ready to go, sat waiting in your fridge! Oats make for a great breakfast as they are really filling and there slow releasing energy should keep you full up until lunch time.

If you struggle to find the time to sit down and eat in the morning, a breakfast smoothie that you can prepare to eat on the go could be the perfect solution. Smoothies are also a great way to cram in a few portions of fruit and veg before the day has even got started. To save even more time, there’s no harm in preparing and chopping ingredients the night before. Just store them all in the fridge, ready to whizz up just before you leave the house.

I love this breakfast smoothie from Annie’s blog, Mind Body Bowl, as it includes a whole host of fruit, veg and seeds which will give you a huge boost of important protein, vitamins and minerals to start the day.

Muffins are a great choice if you have a hectic schedule as you can simple bake a batch at the beginning of the week and you’ve got a handy breakfast, ready to take with you each morning. They’re perfect for eating on the go and you can experiment with different fillings each week for a bit of variations. Recipes made with mashed banana or apple sauce are great as they have a natural sweetness to them, whilst still being relatively healthy! Likewise with the smoothies and oats, you can adapt your recipes depending on dietary or health requirements.
