Looking for a warming autumn recipe for all the family? This is the perfect hotpot dish that’s simple to make and truly delicious.

- 8 good quality sausages
- 1 1\2 tbsp olive oil
- 1 small red onion peeled and finely chopped
- 75g chorizo sausage chopped into chunks
- 2 cloves of garlic peeled and minced
- 1 tsp paprika
- 1/2 tbsp tomato puree
- 1/2 tsp dried thyme
- 100ml chicken stock
- 2 x 400g tin chopped tomatoes
- 400g butterbeans drained and rinsed
Preheat the oven 220C.
Place the sausages in a large shallow baking dish and place in the oven for 20 minutes.
After 20 minutes, drizzle on the oil, add the onion, red peppers, chorizo and garlic and stir everything together. Cook for a further 10 minutes.
Add the paprika, thyme, tomato puree, stock and chopped tomatoes. Stir together and place back in the oven in 10 minutes.
Take out the oven and stir in butterbeans. Place back in the oven for a further 10 minutes then serve.
