Hearty Guinness Baked Gammon

It’s almost time to celebrate one of the most lively Irish holidays, St Patrick’s Day!

We’ve teamed up with an expert chef from Neff to bring to you this delicious baked gammon recipe with an Irish twist: Guinness!

Serve this at your St Patrick’s Day celebrations, and you’ll be sure to impress your guests!

Ingredients

  • I.5kg gammon joint unsmoked
  • 500 ml bottle of Guinness
  • 5tbsps dark brown sugar
  • 2 bay leaves
  • 5-6 whole cloves
  • 5-6 black peppercorns

Instructions

In a saucepan big enough to soak the ham, pour the Guinness, sugar, bay leaves, peppercorns and cloves. Heat just until the sugar is melted  Add the joint, cover and stand for 24 hours.

Remove joint and roast 170 C for 1-1.5 hour depending on size.

Meanwhile boil the Guinness mixture until thick and syrupy.

Remove bay leaves and cloves.

Remove joint from oven if it has hard skin remove at this point. Score the fat below into diamonds and coat with a little syrup. Return to oven at 190C for 30-35 mins.

Baste with more sauce until a dark golden colour is achieved.

Additional sauce may be served on the side.
