I.5kg gammon joint unsmoked
500 ml bottle of Guinness
5tbsps dark brown sugar
2 bay leaves
5-6 whole cloves
5-6 black peppercorns
In a saucepan big enough to soak the ham, pour Guinness and sugar, bay leaves peppercorns and cloves, heat just until the sugar melted Add Joint cover and stand for 24 hours.
Remove joint and roast 170 C for 1-1.5 hour depending on size.
Meanwhile boil Guiness mixture until thick and syrupy.
Remove bay leaves and cloves
Remove joint from oven if it has hard skin remove at this point. Score the fat below into diamonds and coat with little syrup return to oven at 190C for 30-35 mins.
Baste with more sauce until dark golden colour achieved.
Additional sauce may be served on the side.
