Five Boozy Frozen Delights to Indulge in this Summer

With summer in full swing and BBQ season upon us, many of us are looking for recipes to cool ourselves and our guests down.

With this in mind, we’ve compiled five alcoholic and non-alcoholic ice lolly recipes to cool down when spending time in the summer sun with friends and family.

Cold Fashion

  • 75ml bourbon
  • 200ml simple syrup
  • A few dashes of Angostura bitters
  • Fresh orange juice 
  1. Pour all the ingredients into a jug and stir well until thoroughly mixed. 
  2. Carefully pour the mixture into four moulds.
  3. Freeze for at least 8 hours, ideally overnight.
  4. Serve and enjoy.

Strawberry and prosecco lollies

  • 200g ripe strawberries, stalks removed and chopped
  • rose prosecco
  • Pink lemonade
  • Ice
  1. Divide the strawberries between four moulds. 
  2. Fill each mould with three quarters prosecco and top with lemonade.
  3. Freeze for at least 8 hours, ideally overnight.
  4. Serve and enjoy.

Berry Daiquiri poptails

  • Juice 4 limes
  • 200g frozen berries
  • 2tbsp simple syrup
  • 75ml white rum
  1. Whizz the frozen berries with a food processor until purréd then add in all of the other ingredients and mix further.
  2. Divide mixture amongst 4 moulds and place in the freezer for a minimum of 8 hours.
  3. Serve and enjoy.

Gin and Tonic delights

  • Cucumber, sliced 
  • Mint leaves, finely chopped
  • 75ml gin
  • 300ml tonic
  • 3tbsp simple syrup
  1. Pour all the ingredients into a jug and stir well until thoroughly mixed. 
  2. Carefully pour the mixture into four moulds.
  3. Freeze for at least 8 hours, ideally overnight.
  4. Serve and enjoy.

Elderflower ice pops

  • 750ml water
  • 200ml elderflower cordial
  • 1 lemon sliced
  • Fresh elderflowers
  1. Combine water and elderflower cordial in a jug and mix until combined.
  2. Place lemon slices and fresh elderflowers into the lolly moulds and top with elderflower mixture.
  3. Freeze for at least 8 hours, ideally overnight.
  4. Serve and enjoy.
