Chicken Satay Skewers with Dipping Sauce

These juicy chicken skewers have bags of flavour and they’re super irresistible when dipped in the moreish peanut sauce.

Plus there’s something fun about eating food on stick and this makes it perfect for parties, get togethers or just simply with the family.

Serves 4

Cooks: Circotherm 170°C for 15-20 mins.

Ingredients

  • 450g chicken, diced

Marinade

  • 2tbsps dry sherry
  • 2tbsps soy sauce*
  • 1tbsp sesame oil*
  • 1tbsp lemon juice
  • 1tbsp sesame seeds*
  • 1/2 tsp chilli powder

Sauce

  • 55g creamed coconut
  • 125ml water
  • 110g crunchy peanut butter*
  • 10 ml soy sauce*
  • 1/2 tsp chilli powder
  • 1 garlic clove, crushed

Method

  1. Mix the marinade ingredients together and marinade the chicken for at least 3 – 4 hours or overnight in the refrigerator.
  2. Thread the chicken onto skewers (if using wooden variety soak in hot water for 15 minutes before using). Place on wire grid over the roasting/grill pan.
  3. Cook at 170°C for 15 – 20 minutes.
  4. Meanwhile make sauce by putting all ingredients into small saucepan and heating gently together stirring until blended. Then bring to the boil and serve immediately.

Note: If the sauce is too thick add more water. If too thin, add a little more coconut cream
