Challenge the Expected with AEG: Crispy Roast Potatoes

Make this Christmas one to remember with the perfect side of crispy roast potatoes.

From traditional roast potatoes with rosemary and garlic to a plant-based alternative with sweet potatoes and vegan marmite butter, we’ve got you covered! You could even challenge the expected this Christmas with our roasted potatoes with chorizo and anchovies!

See below how you can serve the best potatoes at Christmas this year.

Traditional Roast Potatoes with Rosemary & Garlic

Ingredients

  • 2.5kg Maris Piper potatoes
  • 300g goose fat
  • 4 garlic cloves
  • A few sprigs of rosemary

Instructions

Cut the potatoes into halves or quarters depending on size.

Boil the potatoes for approx. 10 minutes in salted water and then strain and shake in the saucepan.

Lay out the potatoes and leave them to steam and cool.

Heat the goose fat in the oven, add the potatoes and then gently cover them in oil. Add the garlic cloves, rosemary sprigs and season.

Roast in the oven using SteamCrisp at 190oC for approx. 60-80 minutes until a golden colour and crispy crust forms. Turn the potatoes over after 45 minutes.

Serve the potatoes and check seasoning.

Top Tip – Finishing the potatoes for 10-15 minutes using the Pizza Setting on our AEG ovens is a great way to give your roast potatoes some extra ‘crunch’.

Plant Based: Semolina Roasted Sweet Potatoes with Vegan Marmite Butter

Ingredients

  • 3 large, sweet potatoes peeled
  • 50g semolina or polenta
  • 25g of vegan butter
  • 1 tsp of Marmite
  • 1 red chilli (finely sliced)
  • 4 garlic cloves
  • A few sprigs of rosemary & thyme

Instructions

Cut the sweet potato into large chunks.

Boil the sweet potato chunks for approx. 5 minutes and then strain.

Mix the sweet potatoes with a generous amount of oil along with the semolina or polenta. Add seasoning, the garlic cloves and the finely sliced chilli.

Roast in the oven using SteamCrisp 190oC for approx. 50 minutes until a golden colour and crispy crusts form.

Mix 25g of vegan butter with a teaspoon of Marmite.

Remove the herbs from the sweet potato mix, squeeze the roasted garlic cloves and toss together. Dot the Marmite butter around the potatoes to serve.

Challenge the Expected: Potatoes Roasted with Chorizo & Anchovies

Ingredients

  • 2.5kg Maris Piper potatoes
  • 300g goose fat
  • 10 Anchovy fillets
  • 250g Chorizo chunks
  • 4 garlic cloves
  • Sprigs of thyme & parsley to garnish

Instructions

Cut the potatoes into halves or quarters depending on size.

Boil the potatoes for approx. 10 minutes in salted water and then strain and shake in pan.

Lay out the potatoes and leave to steam and cool.

Heat the goose fat and the chorizo in the oven to start releasing the colour into the oil.

Add the potatoes, then gently cover in oil. Add the garlic cloves and thyme and 3/4 of the chopped anchovy fillets.

Roast in the oven using SteamCrisp 190oC for approx. 60-80 minutes of cooking until a golden colour and crispy crust forms. Turn the potatoes over after 45 minutes of cooking.

Serve the potatoes, squeeze out the garlic, garnish with your herbs and a couple of freshly torn anchovies and check seasoning.
