Seasonal Eating: Scallops

August promises many tasty treats as the summer bursts into a final last hurrah, and you’ll likely spot plenty of juicy fruits including plums, raspberries, and possibly even the first blackberries if you’re lucky. It’s also the perfect time to find sustainably-sourced scallops, fresh and full of flavour – ideal with a salad to combat this year’s heatwave!

If you’re not sure what to do with scallops, we’ve put together a quick guide to make sure you don’t miss out on this delicious seasonal treat.

WHAT ARE SCALLOPS?

Scallops are sea molluscs, and can be found across most of the world’s sea floor. They live in shells, but don’t panic – they’re always sold pre-shucked and ready to cook.

WHERE CAN I BUY SCALLOPS?

They’re actually available frozen in most supermarkets, but for the best flavour you want to get them as fresh as possible. Visit your fishmonger instead; they’ll be able to tell you exactly when they were harvested, and probably give you some cooking tips, too!

SO HOW DO I COOK THEM?

Good question! There are many different ways to prepare scallops, and they’re fantastic with a few interesting flavours thrown in to complement their delicate taste. Here are a few of our favourites, to get you started!


SEARED SCALLOPS WITH WHITE BEANS AND SPINACH

Seared Scallops with Butter Beans and Spinach

We’re enamoured with this fantastic dish from Women’s Health, pairing the light crunch of seared scallops with soft white beans and a healthy dose of wilted spinach. It’s nice and simple, the bacon is a fantastic touch, and we reckon this would be perfect with a glass of white wine on a Sunday afternoon!


SCALLOP TACOS WITH CABBAGE SLAW AND AVOCADO SAUCE

Scallop Tacos With Cabbage Slaw And Avocado Sauce

Dress up the scallops a little with Weber’s excellent Mexican-inspired dish that boasts a citrus marinade and a chilli-infused slaw, all wrapped in avocado and tortillas and garnished with coriander. This is the ideal alternative to chilli wraps while the weather is hot – and it’s easy to knock together in the evening!
