Organic Carrot Cake

Now that the dark mornings finally seem to be disappearing and little shoots are popping up through the mud, I feel my creativity creeping back into sight. I love to be surrounded by my nearest and dearest, and welcome the opportunity to get everyone round for a cup of tea and a slice of cake. There is nothing better than waking up early on a Sunday morning and spending the first few hours of the day baking, as the sun lights up my kitchen, before the troops arrive to help me eat the results! This twist-on-a-classic is perfect for organic, gluten-free baking, and it is packed full of vitamins from all those carrots too! An alternative to traditional Easter eggs, but just as tasty, this homemade cake will be loved by all the family.
