Celebrating Vegan Awareness Month

Last month we celebrated Vegetarian Awareness Month by exploring some quick, simple and tasty vegetarian recipes. And with November being Vegan Awareness Month, we thought we’d round up a few more great dishes for you to try at home.

I’ve always found that vegan recipes don’t always go down too well, especially when whoever’s dining prefers a meaty dish. People often assume that they will be bland, boring or not filling enough. As a regular experimenter in the kitchen, I have found many vegan recipes to surprise me (and whoever I’ve been cooking for), with their ability to be creamy, tasty, filling and still vegan.

Sweet potato burger

It’s also good to note that a lot of vegan food is cheap to buy, with many recipes being quick and uncomplicated to recreate as well – what’s not to like?

So, with this in mind, and in the hopes of changing a few vegan-phobia recipe preconceptions, we’ve devised this list of dishes to tempt even the most carnivorous taste buds.

Roast Tomato and Thyme Spaghetti

Katy, from the Little Miss Meat Free blog, is clearly somebody who appreciates the beauty of a simple, tasty and delicious recipe. Her Roasted Tomato and Thyme Spaghetti is everything you could hope for, namely; cheap to buy, quick to make and extremely yummy!

Pumpkin and Chickpea Curry

BBC Good Food’s website also has a great section dedicated to vegan cooking and recipes.
Like this fab low-fat curry with seasonal veg. Great if you’re wondering what to do with all those pumpkins and this versatile recipe can be adapted for whatever vegetables you’ve got in!

Yummy Peanut Butter Cookies

And if you’re after something sweet, you can whip up a quick batch of Jacqueline’s Peanut Butter Cookies, recipe from her wonderful blog Tinned Tomatoes, in under 20 minutes flat. Simply weigh your ingredients, mix everything together, form into cookie sized balls and bake! It’s really that easy!
